Open-Faced Grilled Eggplant Sandwich with Pesto, Tomatoes, and Fresh Mozzarella

Uses: eggplant, tomatoes (substitute cherry tomatoes)
You will also need: basil pesto, olive oil, mozzarella, bread or buns
Time: 30 minutes to let the salted eggplant sit + 10 minutes to cook/assemble sandwiches
Description: Hearty, filling, and delicious! Feel free to add basil leaves or another herb instead of pesto.

Eggplant Lasagna

Uses: eggplant, tomatoes (substitute cherry tomatoes for part)
You will also need: tomato sauce, tomatoes, ricotta, mozzarella, oil cooking spray (or butter/margarine to grease the pan), basil, italian seasoning
Time: 1 hour (approximate)
Tips: If you do not have Italian seasoning, you can substitute with any/all of herbs you have from this list. If you only have one or two of those herbs (fresh or dried), do not be deterred! We promise that it will taste delicious with any herbs you use from that list.

Do-It-Yourself Oven Sun-Dried Tomatoes

Time: 4-5 hours (6 hours if using larger tomatoes)
Note: I made these last week with cherry tomatoes in our toaster oven and not only was it easy, but the tomatoes were divine! Feel free to add herbs, olive oil, and/or salt.

Tips: Try adding apples! You may want to cook them lightly before adding them to the cobbler since they take longer to cook than the blueberries.

Caramelized Apples

Uses: apples
You will also need: butter, sugar, optional: yogurt or ice cream for serving
Description: The apple cooked with a knob of butter is a Tarte Tatin without the tart, many small caramelized fruity slices, an interesting contrast with a cup of plain yogurt as spring afternoon break, sitting by the window to smell the blooming flowers.
Note: This is a great method for preparing some of the first apples of the season which tend to be tart.
