Week 5: Vegetable combinations

Sweet potatoes and cilantro seem to be calling to each other this week. It's always fun, once we determine what is going to be in a week's share, to think of ways to combine the vegetables together to make a meal.



This week, I bring you two ideas for sweet potatoes that utilize some of the other share items as well. First up is a Moroccan Chickpea and Sweet Potato Stew, which combines the sweet potatoes with onion, garlic, and cilantro. You might try sauteing up the collards, instead of the spinach the recipe calls for, if you'd like to use those as well. 

Miso-Maple Sweet Potato Tacos with Coconut-Cilantro Sauce is a mouthful alright. Recipes with as many components as this can be intimidating, but I try to let them guide me as inspiration, rather than following them to a tee. I'm sure it'd be delicious as written, but I bet it'd also be tasty without the miso glaze. The cilantro sauce sounds interesting though and reminds me of another use for cilantro...

Cilantro pesto! Here the cilantro is used instead of the more traditional basil, to make a pesto than can be used atop just about anything. I think it'd make a lovely substitute for the more complicated cilantro sauce called for in this recipe for Stuffed Portobello Mushrooms.
